What is a Truffle?
A Truffle is the fruiting body of a subterranean fungus, predominantly one of the many species of the genus Tuber. Truffles are ectomycorrhizal fungi and are therefore usually found in close association with tree roots. While there are dozens of different types of Truffle, only some of these species of Tuber are highly prized in the culinary world as they add depth and flavour to dishes.
Truffles are not the chocolate
Although there are dozens of different types of truffle, only a few are actually edible. They are mostly classified based on taste, smell and appearance.

Grades of Truffles
The premium grade of black truffle. They have a good regular shape and are sufficiently mature to have the characteristic fully mature aroma, taste and colour. They would be perfect to present at any table in the world.
May have an irregular shape, immature colour (early in the season) or have some minor surface damage caused during harvesting, but otherwise are of high quality – have a good taste and aroma characteristics of the black truffle – making them perfect for kitchen preparation.
Occasionally our growers harvest very large truffles of over 500 grams. To ensure the centre meets our quality standards, we prefer to cut them. However in the event of a larger truffle being unearthed we are able to email you a photo so you may decide to auction or use it as a fundraiser or special occasion as a whole truffle.
Smalls and pieces
The truffle has good aroma consistent with other grades and are suitable for product manufacture or home consumption where size and shape is of no concern.
